A Döner kebab means rotating meat like a greek Giro.
The lamb is stacked onto a large skewer that is rotated mechanically or manually, vertically in front of a gas or charcoal fire.

The chef slices off the outer cooked meat while it continues to rotate in front of the fire. The meat is continuously basted by the juices that run down.

The word kebab simply means fried or roasted meat and not neccesarily the skewered meat that we often call kebabs. Skewered meat are actually sis kebabs (Shish kebabs), the sis part refering to the skewer.
